In the heart of Emilia Romagna, in Modena, our Pastificio, has always carried on the authentic and magic Emila’s traditional taste. A tradition seeing in fresh pasta its highest expression, with many simple creations capable of conveying all their delicious soul.
But as you well know, it is such a difficult job to pass down what our grandparents, and their grandparents before them, have reached to create, although with a right passion everything is possible.
That is why to make our artisanal fresh pasta we only use carefully selected raw ingredients, mostly from our area. Think about flours or fresh eggs and you see the difference they can make.
Then, besides ingredients, there is a keystone: craftsmanship. In our artisanal pastificio we try to keep as simple as possible pasta manufacturing processes to preserve all the valuable features. That is the reason why we only work with the bronze die extrusion, to give our pasta great porosity binding perfectly to any gravy.
